Chocolate Chia Seed Pudding –
Number 1 Go-To Healthy Treat!
With the new addition of our “Easter Treat”, (baby Clark!) Life has been pretty amazing. It’s truly a miracle after waiting 9 months to see this beautiful baby boy with all his fingers and toes! We are very grateful he is healthy and actually happy! He giggles in his sleep and it’s a pretty sweet site to see! 🙂
For all of you who have been through this process of child birth you know it can be a pretty amazing part of your life! It can also be a time of sleep deprivation, which causes tiredness. And it can be a bit of a stressful time as well with many changes occurring like duties caring for another human being and hormone adjustments on top of that. Of course, the thoughts of “losing baby weight” is always lurking in the back of your mind!
I’m finding if I’m tired or don’t get enough hydration I start craving chocolate and get that need it now sensation that can get me a little side tracked on the losing baby weight plan AND staying healthy. I doesn’t help that my first born got these amazing Easter treats that I’ve put in a big bowl in the kitchen. Consequently it’s way too convenient to pick one of my favorite Easter treats whenever that need it now sensation comes a calling.
But, after I eat that amazing, delicious, chocolate snack I find myself back to feeling tired and not very energetic. I really enjoyed the time eating those chocolate treats but it never gave me the long lasting energy I was really searching for.
So, I’m devising a plan to have Healthy Go-To’s instead! My first choice is my favorite, yummy, Chocolate Chia Seed Pudding. There are so many chocolate chia seed pudding recipes but this one is pretty awesome! I sweeten it with Stevia and add my favorite fruit, Strawberries. I put the Chia Seeds in the Strawberries to make it easier to layer. I really like dark chocolate, which isn’t as sweet as milk chocolate can be. So my recipe won’t be over the top sweet. You can always add more Stevia or even sugar if you would like to sweeten to your heart’s desire. To top it off I add non-fat Cool Whip and sprinkle with chopped Pecans. It’s also dairy free, gluten free and sugar free!
This treat is low cal, satisfies my sweet tooth like no other and fills me up so I don’t need to eat anything else. I would highly recommend this snack if you are in the same boat of wanting to lose weight and need a sweet alternative to help with those sugar cravings. It’s also a healthy snack choice if you are just in the spirit to eat a more healthy diet. Either way I would like to put this treat as number 1 on my list!

- 3 cups of Coconut Milk
- ½ C Cocoa Powder
- 8 T Chia Seeds
- 4 T Stevia
- 2 Cups Strawberries
- 1 T Stevia
- Mix Chia Seeds, Cocoa Powder, Stevia and Coconut Milk together. Let sit over night.
- Blend 2 cups of Strawberries add Stevia and Chia Seeds. Let sit over night.
- Put layer of Chocolate Chia Seeds in small glass. Put layer of Strawberry Chia Seeds on top. Pipe Cool Whip and top with chopped Pecans.
