We all have our favorite recipes for chocolate chip cookies. As a matter of fact I have 2 favorites. One is a recipe my neighbor gave me that I truly love and used in one of my 4-H baking projects. It did very well in competition and I’m grateful she shared it with me. It uses 1/2 crisco and 1/2 butter combo. I absolutely love that cookie but didn’t use it for this recipe. Maybe next time…
The recipe I used today came from the back of the Nestle’s Semi Sweet Chocolate Chip bag. This one is my 2nd favorite recipe and I tweaked it a little for the Chocolate Chip Cookies Ice Cream Sandwich Recipe.
Everyone who tried these cookies had the same question, “How did you get these cookies sooo Soft? It’s amazing!” Well, I would LOVE to share the “Secret” with you now. There are a couple things to consider when making cookies for an Ice Cream Sandwich and one is eggs. In this recipe I’ve added an extra egg to the generic Toll House cookie recipe. I used 3 eggs instead of the usual 2 eggs. I also decreased the baking temperature and increased the baking time by 1 minute. This also allows for a softer cookie that isn’t too brown.
These Chocolate Chip Cookies Ice Cream Sandwiches were made with Chocolate Chip Cookie Dough Frozen Yogurt. Just click the link and you can get this delicious recipe too. You can use any ice cream or FRoYo flavor you like! Just make sure to soften the ice cream or FRoYo before applying to the cookies. I also wrapped each one individually with plastic wrap and froze to eat another day. They were amazing to eat right out of the freezer because of the softness of the Chocolate Chip Cookie.

- 2¼ c flour
- 1 t. baking soda
- 1 t. salt
- 1 c ( 2 sticks) softened butter
- ¾ c sugar
- ¾ cup packed brown sugar
- 1 t. vanilla
- 3 large eggs
- 1 c semi sweet chocolate chips
- 1 c semi sweet chocolate chunks
- Preheat oven to 350 degrees
- Combine flour, baking soda and salt in small bowl
- Beat butter, sugars and vanilla in large bowl until creamy.
- Add eggs, one at a time, beating after each addition.
- Gradually beat in flour mixture.
- Stir in chocolate chips and chunks.
- Drop by rounded tablespoon on ungreased baking sheet
- Bake 10 minutes.
- Cool 2 minutes on sheet then remove and place on cooling rack.
