I’m always amazed to find some people really don’t like chocolate, can you believe it? There has to be some kind of fun psychology test for that. What does it mean if you LOVE it? So if you’re in the group who LOVES chocolate, especially the darker kind, this recipe is for YOU! Consequently if you like more of a milk chocolate flavor, just add a little more sweetener and this recipe is just for YOU, too! Well, that’s easy!!! And if you don’t like Chocolate very well, come back next week for another sensational flavor you might just fall absolutely in LOVE WITH! My mouth starts watering just thinking about next week’s recipe!!!! It’s got to be one of my favorites 🙂

With the new addition of our “Easter Treat”, (baby Clark!) Life has been pretty amazing. It’s truly a miracle after waiting 9 months to see this beautiful baby boy with all his fingers and toes! We are very grateful he is healthy and actually happy! He giggles in his sleep and it’s a pretty sweet site to see! 🙂
For all of you who have been through this process of child birth you know it can be a pretty amazing part of your life! It can also be a time of sleep deprivation, which causes tiredness. And it can be a bit of a stressful time as well with many changes occurring like duties caring for another human being and hormone adjustments on top of that. Of course, the thoughts of “losing baby weight” is always lurking in the back of your mind!

EASY Easter Dessert #2 of 3
This is the 2nd recipe out of 3 simple recipes we are sharing for an EASY Easter Dessert Treat. Our Flower Pretzel Treat is a very popular and easy way to brighten up your guests mealtime experience. With the combination of sweet and salty the taste is a classic favorite. The colored chocolate candies in the shape a spring time flower can brighten anyone’s day.
We had so much fun making these treats. My mom, my sister and my daughter all came together to make our part of the potluck meal, which of course was the desserts! Baking together seems to bring out the happy, fun times. It’s filled with memories of bonding, creating and eating yummy food! And of course big messes!!
EASY Easter Dessert Recipe #1
This is the first recipe of a series of three Easter Desserts I will be sharing. I’ve come up with 3 easy desserts you may want to try and share at your Easter Dinner Celebrations or maybe just to have some sweet treats around to remind you of the colors of spring and happiness.
Easter is just around the corner! It’s time for preparing and baking those special treats that brings us all together in the spirit of celebration. One of the best parts of baking is sharing in the fun with family and friends. Whether you’re sharing in the fun of baking or eating, desserts have a way of bringing a connection and joy in the process. This Easter Egg Cake Pop was made by my sister, my mom and I. As you can see, my daughter sat on the counter in a baby chair and watched us bake! It was a great bonding time with all the girls having fun in the kitchen. We were the dessert providers and made several different items I’ll be sharing with you in the next few posts before Easter.
The bright colors and mix and matches were fun to design and create. It was so easy and we all had a blast.
Cake Pops seem a little intimidating at first. I worked in a bakery during college so I’ve had my share of cake pop making. I wanted to share this with you in case you might have a desire to make some for Easter or any occasion. They are super easy, so don’t be intimidated at all! A friend of mine made them for a baby shower for everyone’s dessert instead of cake. They’re also a special treat for birthday parties, kids love them! What ever the occasion, they are sure to be a hit!
Start out with a white cake recipe. We have a fabulous white cake recipe that you will surely love! It’s super moist and very tasty. Click on the link: http://dessertsbyjuliette.com/2013/09/28/white-cake/. Do not frost the cake!
If you want to keep it super simple you can always open a store box mix and make white cake as well. Use whatever works best for you!
After you make the cake you will tear it apart. Yep, I said tear it apart. It will look a lot like the picture below:

Melt your favorite colored chocolate wafers. I get mine from Michael’s Craft store or you can get them on-line through Amazon or WalMart. I like the Wilton brand and they have sooo many great colors now. You could make the most beautiful colored Easter Egg Cake Pops ever! Here’s a sample of the one’s from Amazon so you know which one’s I use.
After you dip the balls in the melted chocolate, you can put them on cake pop sticks or lollipop sticks to cool. You can get an inexpensive bag at WalMart, Michael’s, any craft store or Amazon.
If you like to add an additional color, make sure you let the first layer dry. Let your imagination take over and create and enjoy! They sure do brighten any table at Easter and they taste marvelous!
- Make White Cake Recipe
- Favorite Buttercream
- Various Colored Chocolate Melting Chips
- Lollipop Sticks
- Make your favorite White Cake Recipe or use ours! Cool cake and break into small pieces in a large mixing bowl. Make your favorite Buttercream Frosting or use our favorite Italian Buttercream Frosting Recipe! Mix cake and Italian Buttercream Frosting until balls can be formed. Melt favorite colors of chocolate melting chips. Dip balls into melting chips and place on lollipop stick to cool. Drizzle colored melted chocolate on cooled Cake Pops/Bites and decorate. Cool and remove off lollipop sticks to place in bowls with paper Easter grass. Enjoy
Chocolate Chia Seed Pudding
Chia seeds have really evolved over the years. Remember the ceramic heads that grew Chia hair? How did we not know all the benefits of chia seeds back then? Did you know chia seeds are full of nutritional value and power packed with antioxidants that tastes great too?
Chia seeds are high in Omega-3’s, contain protein, fiber and vitamins and minerals. I’ve included a great link on Dr. Axe’s website with benefits listed in an easy to ready format. Take a look, you’ll be surprised! https://draxe.com/chia-seeds-benefits-side-effects/
I wasn’t quite sure how this would turn out but I think of it as a kind of tapioca pudding dessert. I’m totally not the expert in this field and the recipe I’m sharing was one of my first attempts at producing an edible chia recipe. I do have to say it was very easy and turned out great! My family, or I should say my guinea pigs, loved it and couldn’t get enough!
You could use any fruit or flavoring you desire but my all time favorite is raspberry and chocolate so this is what I used.
This recipe is made with coconut milk and Stevia so it’s dairy free, gluten free and sugar free if you substitute the non sweetened applesauce with Stevia! Doesn’t get any better than that for all of us sugar conscious, healthy eating types. If you didn’t tell anyone it was sugar free they would never know the difference.
- Raspberry Chia Pudding
- ½ c. Fresh Raspberries blended with 1 T. water
- 2 T. unsweetend applesause or Stevia
- 1 T. Chia Seeds
- Mix and refrigerate
- Chocolate Chia Pudding
- 2 c. coconut milk
- ¼ c. plus 1 T. cocoa powder
- 5 T Chia Seeds (if desire thicker pudding use 6 T.)
- 3 t. Stevia
- Mix and refrigerate
- After making each flavor, refrigerate overnight and layer in the morning for a breakfast treat or afternoon snack.
- Sprinkle with Cinnamon and top with sugar free, fat free cool whip.
We’ve had a pretty mild winter here so far. It’s the beginning of December and this week we’ve had high temps close to 60 degrees! That’s pretty unusual for weather in the Midwest but we know the snow and cold weather will be coming our way soon enough.
For those chilling days ahead of working outside shoveling snow, building snowmen, skating, snowmobiling or just going for walks catching snowflakes on your tongue, isn’t hot chocolate the best warming station there is? It warms your hands holding it and your body drinking it. Of course warming your soul goes without mentioning.
If you could rate your hot chocolate experience on a 1 to 10 scale, this hot chocolate would be a 10+! There’s no packaged mix that can give you the same satisfying sensation like homemade hot chocolate.
We are sharing one of the best homemade hot chocolate recipes so what can get any better? Topping it with Italian Buttercream Frosting! Chocolate Italian Buttercream or Vanilla Italian Buttercream will send you to cozy heaven!
- Heat 2 cups of milk until steaming
- Add 1/2 cup chocolate chips
- 1/2 teaspoon of vanilla
- wisk until melted
If you like mint hot chocolate you could add 1 teaspoon of mint extract for that oh so yummy chocolate mint flavor. Don’t forget the Italian Buttercream Frosting to top it off!
You could also add mint to your Italian Buttercream if your a mint lover like me! Even a little green (non-liquid) food coloring to make Mint Italian Buttercream Frosting would look and taste great with some shaved chocolate on top!
Chocolate lovers could drip their love all over the top!

Plain Jane Vanilla Italian Buttercream!
Tap into your creative self for any color and flavor you can think of and you’ll be enjoying the best few minutes on a cold wintry day! Ah, makes me relaxed just thinking about it.
For those of you wanting to step out of the box for St. Patrick’s Day, this recipe is your ticket. What better way to celebrate the holiday than with festive Irish Cream Truffles! As you can see in the pictures below, I used milk chocolate for the ganache and white chocolate for the shell of the truffle. I would suggest using only white chocolate with white chocolate and dark with dark. The combination that I made was really tricky when placing the chilled mixture into the white chocolate. If you want to use dark or milk chocolate for your truffles, white and green sprinkles would look awesome!
I’ve added a special recipe below for home made Irish Cream!
12 ounces milk chocolate, plus 12 ounces for dipping
3/4 cup butter, unsalted
1/4 cup Irish Cream (see below for easy recipe)
Melt 12 ounces of milk chocolate over a double broiler on low heat. I use a saucepan filled with about 1 inch of water with a Pyrex bowl on top. Once melted and completely smooth, take off of heat. Add butter and stir until fully incorporated, then add cream. Place bowl, covered in a refrigerator for at least five hours. For best results, leave overnight.
Once the mixture has cooled completely, melt the 12 ounces of chocolate for dipping. Remove the chilled mixture from the refrigerator. To form the truffle shape, use an ice cream scoop then smooth over by molding with your hands. Then dip into the melted chocolate. Using a fork, remove the truffle from the melted chocolate and set on a sheet tray covered with parchment paper. Let cool.

Home-Made Irish Cream Recipe: Combine 1 cup heavy cream, 1 (14 ounce) can sweetened condensed milk, 1 cup of Irish whiskey, 2 teaspoons of instant coffee, 1 teaspoon of vanilla extract and 1 teaspoon of almond extract into a saucepan. Heat on low until all ingredients are fully incorporated. Can be refrigerated for up to five days.
