Do you say Energy Balls or Energy Bites? We say Energy bites on this blog but either way they are the same. Mango Coconut Energy Bites are the perfect grab and go snack! Ok, we are talking super easy recipes here. Anything sticky will work! Go for the raisins, crasins, dates, figs, mangoes, you get the picture. Energy bites have very few ingredients but are so flavorful because they are all fresh ingredients with no weird preservatives.
Going for the Gold!
If you see energy bites on Pinterest or Google you’ll find the majority are on the brown side. For our first recipe we wanted to mix up the colors a little and we went for the GOLD. Mango Gold! And what a great side note for mangoes comes Coconut! If you love mangoes and you love coconut, you will fall head over heals for this great energy bite! It is like heaven in a little ball/bite!!!
Food Processor, NO Blender
So pull out your food processor, NO Blenders allowed for this recipe. The Mango Coconut Energy Bites mix will be too sticky for the blender. We wouldn’t want you to cut your finger on a blender blade, OH NOO! Food Processor all the way with Energy Bite Recipes!! They are safer and easier to clean up!
Can you say OMG so EASY FOR ME?
Serious, I can’t tell you enough how these energy bite recipes are so easy!! I made them for my friends and they were all like, OMG these are so great how in the world did you make them? It kind of felt good that they thought it was so difficult but honestly I couldn’t lie. I’m a terrible liar anyway. This has got to be one of the easiest snacks to make and it’s healthy with no preservatives or additives. You chose what goes in so you know it’s good.
Energy bites can be refrigerated or frozen
Since the ingredients are fresh, they should be refrigerated after making them. They can last in the refrigerator for a week (if they don’t get eaten before that!) and the freezer for 3 months. Each recipe makes from 20-24, 1/2 T bite sizes.
- 1 c dried mango
- ½ c pecan chips
- 2 T coconut oil
- ⅛ t. salt
- 3 T honey
- ½ c shredded coconut
- Blend all ingredients in a food processor until sticky and slightly chunky. Take batter and roll into small ½ T. bite size balls. Roll in shredded coconut. Refrigerate for 1 week, freeze for 3 months. Enjoy!
